Cooking Time & Temperature

Set the time you want to eat, list what has to be cooked, and get a start time for every dish — sorted so you know what goes on first. Below that: oven temperature both ways, and what happens to the clock when you move the dial.

Changed the dial? Estimate the new time

Rough kitchen rule: every 25°F (about 14°C) hotter cuts the time by roughly 10–15%; every 25°F cooler adds the same. An estimate only — check doneness, not the clock.

Enter both temperatures and the recipe time.
From the book — Chapter 6. Timing a meal is subtraction, done backwards. Start from the serving time and take off prep, cook and rest for each dish — the dish with the longest total goes on first. Temperatures convert with °F = (°C × 9/5) + 32 and °C = (°F − 32) × 5/9. And when two dishes want two different oven temperatures, one of them has to move: bake the cooler dish first, then raise the heat.

Times crossing midnight are shown with a "previous day" note. Food safety depends on internal temperature, not elapsed time — always check doneness. Everything stays in your browser.
